I discovered Just Mayo at the International Restaurant and Foodservice Show in NYC last month, and boy was I impressed.
I tried both the original and chipotle mayo and could not get over how creamy and rich it was. Guilty: I did multiple tastings to make sure there I didn’t taste any egg ….
The classic recipe for mayo contains eggs, oil, mustard, vinegar, lemon juice, with variations here and there, but the egg yolk is key to bringing everything together.
Hampton Creek was on a mission to find something plant-based that would have the same emulsifying properties as an egg. The result was Beyond Eggs, an egg replacer made with pea protein.
Their vegan mayonnaise, Just Mayo, is an egg-free mayo made with Beyond Eggs
Unlike Hellman’s, it is non-GMO, cholesterol free, dairy free, egg free, gluten free, soy free and contains no artificial colors or flavors.
