Zucchini Patties

Spring has been super busy for me and while I love to cook, sometimes I just need a quick and easy no-fail recipe. Let’s be real here-do we really need stress in the kitchen after our long stressful day at work? Because zucchini is my favorite green food I couldn’t wait to make these zucchini patties! They’re super easy and delicious and stress free I promise =P.

Yields 10 patties

Ingredients

2 medium zucchini, grated

1/2 teaspoon salt

2 green onions, finely sliced

1 garlic clove, minced

1/2 cup whole wheat or all purpose flour

1 large egg, beatened

1/2 small onion, finely diced

1 tablespoon olive oil

salt/pepper to taste

Directions

1) Place grated zucchini in a strainer over the sink, Add salt and gently toss to combine; let sit for 10 minutes. Place a dish towel (paper towel will work too) and drain the zucchini completely by either squeezing the excess water or using the back of a spatula. Note: Do not skip this step!

2) In a large bowl, combine zucchini, green onion, onion, flour, garlic, egg and season with salt and pepper to taste.

3) Heat olive oil over medium high heat (you can use cooking spray too to make flipping easier). Use an ice cream scoop to scoop the batter for even sized fritters and scoop  batter for each fritter onto the pan and flatten with a spatula. Cook until fritters are nicely golden brown, about 2 minutes. Flip and cook on the other side until golden brown.

Serve immediately as a side or appetizer and enjoy!!
