Apple Pumpkin Muffins

Fall means pumpkin lattes, apple picking, brussels sprouts and an abundance of delish fall veggies!  In celebration of my favorite season, here is a recipe for some healthy apple pumpkin muffins. When straight out of the oven or warmed up a bit, it’s the perfect treat for a cool autumn morning!

Yields: 12 muffins

  • 1/4 teaspoon cinnamon
  • 1 cup diced apples
  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1 t baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon all spice
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1/4 vegetable oil
  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract


  1. Preheat oven to 350 F. Lightly grease muffin pan for 12.
  2. Sauteed chopped apples and cinnamon in skillet over medium heat until wilted. Set aside.
  3. In a large bowl, sift together the flours, sugar, spices, baking soda and salt.
  4. In a separate bowl, whisk together the egg, pumpkin and oil. Slowly add the pumpkin mixture to flour mixture until just combined.
  5. Fold in apples and using a spoon or ice cream scoop, scoop into muffin pans.
  6. Bake in oven for 20 to 25 minutes. You can check when they are ready if you insert a toothpick in the center of the muffin and it comes out clean. ENJOY!
